Crispy Kale

For those of you who follow me on Facebook (Totalnutrition Ireland) you will know in my house we absolutely love kale.  Three key reasons I love it are:-

  • Nutritional value
  • Grown locally everywhere
  • Great value

Nutrition has many angles not only do we need to consider the nutritional value of the food (which I will touch on later) but also its accessibility, seasonality and environmental impact.

On this basis it is important that I not only encourage you to eat the right types of food but also to support local and to eat in season.  Presently Kale ticks all of these boxes.  It seems also to be the latest wonder food due to its fantastic nutritional value – it is bursting with fibre, calcium, vitamin B6, potassium, vitamin E, vitamin B2, iron, magnesium, vitamin B1, omega-3 fatty acids phosphorus, protein, folate and niacin – phew is that enough nutrients for you!

So on that basis lets eat more of this fantastic food.  Here at Total Nutrition I like to stir fry it with ginger, garlic, chilli – you can also all other vegetables like leeks and courgette.  To ensure the nutrients are kept whilst cooking chop everything up nice and small.  Boost its nutritional value by using coconut oil!
