We all like something a little sweet, with this in mind below is my recipe for delicious blueberry muffins which are not only simple, quick and tasty they are totally nutritious. The muffins contain 300g of blueberries which are full of vitamins and antioxidants supporting our skin and hair, they also have seeds; a good source of protein, which when combined with the sugars will support blood sugar balance. These are so simple even my 7 year old can manage with a little help on the butter – give them a try for a weekend treat with some friends coming over for a cuppa or as an after dinner special for the whole family.
Andrea’s Blueberry muffins make 12!
300g self raising flour (spelt or wholemeal flour with a teaspoon of baking powder)
Handful of porridge oats
Handful of Lynwoods mixed ground seeds (flaxseeds, pumpkin, sunflower or any from the range)
125g sugar
100g butter (melted)
2 eggs
1 cup of milk (rice milk, goats milk or almond milk for diary intolerances)
300g of blueberries (frozen berries are also just as good)
Place all dry ingredients in a bowl and mix, follow this by adding all the wet ingredients – egg, milk and butter. Mix the muffin batter being careful not to over mix, add the berries or frozen berries and place in a muffin tray with paper cases.
Bake in a preheated oven at 180 degrees for 15-20 minutes until brown and golden! Enjoy with a lovely green tea or any teas from the Pukka range!
